Purchase or harvest 1 bundle each of green grapes, red grapes, blueberries, and one other favorite berry or melon
Wash thoroughly and take off the vine
Arrange together on a freezer safe dish like a glass container and place in a freezer bag with a zip top
Allow to freeze for at least 3 hours or overnight if possible. Take the dish out of the freezer bag and enjoy with your favorite meal or movie
Recipe #2: Fresh Hand-Cut Cucumber Summer Fiesta Salsa (vegan)
This next recipe takes vegetables and elevates them to the next level so that you can enjoy them as a side or as a main entree if you’d like. Pair this salsa with your favorite healthy chip or even make your own if you’ve got some hand-made tortillas handy.
Here’s the recipe.
4 fresh ripe tomatoes, deseeded and chopped into small chunks
1 green chili deseeded and diced into matchstick sized pieces
1 red onion peeled and diced
3 jalapenos deseeded and diced
1 teaspoon garlic powder or 1 clove of freshly diced garlic (you can roast if first if you’d like)
.5 medium cucumber peeled and chopped into 1 or 2 cm square chunks. You can also grate it with a cheese grater
1 teaspoon of chili powder
The juice of 1 fresh lime
Salt and pepper to taste
The prep: Mix all ingredients into a medium serving bowl and stir with a wooden spoon. Add salt and pepper to taste and you can even add some diced red bell peppers or other flourishes if you’d like. Serve fresh with your favorite chip or on top of your favorite grilled chicken breast and rice.
